On an island right by the Arctic Circle, where most vegetables grow only for a few short months in the summer, creating a menu from locally sourced ingredients all year round is bound to be a challenge. The master chefs at Dill saw an opportunity instead of a problem and their methods are a perfect balance of innovation and the revival of old methods of food production. Dill Restaurant is the brainchild of Gunnar Karl Gíslason and Ólafur Örn Ólafsson who have been leading chefs within the 'New Nordic' development in Iceland.
Dill Restaurant is a small intimate restaurant, located on Hverfisgata 12, right in the middle of Reykjavik´s city centre. Dill Restaurant follows the 'New Nordic' theme and offers only classic Nordic ingredients that are prepared in a modern way with contemporary gadgets and unlimited creativity.
Dill Restaurant is open for dinner from Wednesday to Saturday. Every week has its own seven-course menu with selected wines to match each course. The menu changes along with the seasons and the ingredients available, meaning that each visit to Dill is going to be a fresh adventure and a new opportunity to explore the bounty this rocky island has to offer, after all.
Dill Restaurant quickly established itself as one of Europe's leading restaurants and been on the receiving end of many awards while being nominated for many more. Dill Restaurant was recently nominated for the Nordic Prize as one of the best restaurants in Scandinavia.
